🍽️ What is Paneer Pasanda?


The paneer pasanda is a thick, creamy, slightly sweet, North Indian curry that is prepared using stuffed paneer sandwiches in ghee/oil and is served in a royal Mughlai gravy.

It has become a household dish at restaurants as well as one of the most-searched Indian recipes on the Internet.



🧀 Paneer Pasanda Ingredients

1. In the case of Stuffed Paneer Sandwiches.


Paneer -250 g( cut into thin rectangles)

Boiled mashed potato – 1 small

Cashews (chopped) – 1 tbsp

Raisins – 1 tbsp

Green chili (finely chopped) – 1

Coriander leaves – 1 tbsp

Salt – as needed

Cornflour slurry -2 tbsp (to close the sandwich)


2. For Gravy


Onions – 2 (chopped)

Tomatoes – 2 (pureed)

Cashews – 10 (soaked)

Ginger-garlic paste – 1 tbsp

Fresh cream – 3 tbsp

Butter/ghee – 2 tbsp

Oil – 1 tbsp


3. Spices


Turmeric – ½ tsp

Red chilli powder – 1 tsp

Coriander powder – 1 tsp

Garam masala – ½ tsp

Kasuri methi – 1 tsp

Salt – as needed


How to prepare Paneer Pasanda Step by Step Guide.


Step 1: Prepare Stuffing

1. Take mashed potato.

2. Add cashew, raisins, chilli, coriander, salt.

3. Mix well.


Step 2: Make Paneer Sandwiches


1. Cut paneer into thin slices.

2. Put stuffing in between two pieces.

3. Seal with slurry of cornflour.

4. Fry, very shallowly, till golden.

this makes it have that restaurant-style pasada feel.


Step 3: Prepare the Gravy Base


1. Heat butter + oil.

2. Add ginger-garlic paste.

3. Cook chopped onions and saute till golden.

4. Add:

turmeric

red chilli

coriander powder

5. Add tomato puree.

6. Cook until oil separates.


Step 4: Make it Creamy


1. Grind cashews very lightly mixed with water and place in gravy.

2. Add ½ cup water.

3. Simmer for 5–7 mins.

4. Add cream.

5. Salt, garam masala and crushed kasuri methi.


Step 5: Add Paneer Pasanda


1. Put the paneer sandwiches in the gravy and fried.

2. Take a mere 23 minutes to cook (paneer should not be overcooked).
